Just out of curiosity, for those who have actually seen said models and maybe have played LotR:

I'm thinking about going for a more "Holy Paladin" sort of feel with this upcoming Bretonnian army, but the models they provide, while cool, aren't exactly to my liking. And there just isn't a whole lot of 'knightly' bits you can use to customize them, it seems.

I think GW have a policy where you can't use LOTR models in Fantasy or 40k, and vice-versa. but I could be mistaken for that may just be a rule for GD entries.

They'd be too small. LotR uses a realistic scale, while Fantasy uses Heroic. It's a shame. Certain models CAN work (for example, I bet the Fell Beast would be a perfectly plausible mount, as would Shelob), but they're certainly the exception. I had a Nazgul (can't remember which) as a character in my Tomb Kings army and he didn't look out of place.

I guess my next task is to try and find some more knightly bits to customize Bretonnian Knights of the Realm so that they look more armored (Full Plate, rather than Chainmail). I participate in an area that does 'official' tournament rules (so things have to be at least 75% GW, but can be unpainted, but it has to be acknowledged that you're slowly working on getting them painted, etc).

It's more complicated than extra armor. If you were to compare a LotR cavalry to the Knight of the Realm you would see an extremely massive size difference beyond a little armor.

Maybe try using Chaos knights?They're heavily armored and you can easily remove the Chaosy bits. Maybe add some Bretonian heads and arms?
It's really a shame about the non-crossover bit. Treebeard makes a MUCH better looking treeman that the WFB minis. Another option if you're up for it is use the LOTR minis on WFB cavalry bases. What you'll have is an army of Bretonian halflings on war ponies. I've used that trick for my halfling Grand Master of the Order of the Poor Knights of Sigmar. Also for my halfling Chaos Lord (they gave her a Chaos pony and she went out and had it bronzed). You probably couldn't take it to a gamesday, but anyone who complained will never get second breakfast again!
