They have one already. It's called a Manta Missile Destroyer.

It seems to me, from the fluff, that Mantas fulfill the role of Titan in the Tau armies. Maybe in order to keep with the Tau "contrariness" they don't use any kind of Titans.

Well, fundimentally, the problem of a Tau titan is that, as Ratman said, it isn't very fluffy.
Tau value mobility over pretty much everything else. Remember how much mobility is emphesised in the story tactics in the codex plus other resources? It's all about movement, and Titans don't give you that. They're pretty slow, lumbering, and although powerful, is like a giant Broadside hulking through a battlefield.
Tau would also not field one, as they would have no way of moving it around. They're generally not practical if you don't have a mean of getting them to the battlefield, and Tau don't, as their standard transport is the Barracuda, which is too small to even fit a Devil Fish into.
A Tau Titan would have to be able to deepstrike, as well as jump jet back into the gravity hook of a supporting frigate in low orbit. Now, that wouldn't happen, as it isn't effecient at all, and not Tauish.

Read the fluff.

As Tonka stated, the Tau titan is the Manta Missile Destoyer, is says that it is the equivilent of the Gargants and Titans. It is bigger, just as well armed, able to transport full armies, and best of all, very mobile.

Hmm...I guess you're right. I always think of land vehicles when I think of Titans, like the IG battletank, or the Eldar walker.
I guess a small frigate can be considered one too ^_^.

But I do not think there is a model for the MMD, is there? It would be far to large to feild on any battlefeild anyways..

I had an idea for a Tau Dreadnaught. I will post about it in the morning when I do not have a splitting headache.
