Guestion is that; What is a Spyrer Hunter Rig and what does one look like?

Possibly, but it would probably be closer to a Spyrer Hunter Rig than a full XV 8.

I think Spyrer hunters are a type of armor in Hive cities.

Well, I would assume that a human would be able to pilot a battle suit if the Tau retrofitted it for them.

Now, actually getting the Tau to retrofit the battle suit would be a bit tricky. I think that if a high enough ranking Imperial defected and proved himself as a Gue'vesa, he would probably gain Battlesuit privileges. He would likely be a Mon'at, though.
