so im looking at maybe starting a witch hunter force, but really have nothing to start with as they dont have a battle force or something similar. it probably wont get anything over a 1000 points or anything, so i wondering what are some good units to get. I would prefer to stick mainly to SoBs and their ilk but if its not applicable its totally legit.

Unfortunately with a model line that is all metal (with the exception of the Rhino, Immolator and half of the Exorcist), they don't have a Battle Box and probably won't.
As far as starting, first thing is always to get the codex. Next would be 1 Metal Canoness (or Celestine, the Living Saint) and 2 Boxes of Sisters. For filling out the rest of the list: Elites: Sisters Repentia, and Celestines. All pretty much made for fighting in close combat. Celestines are the veterans and are the only one of the 3 that have ranged weapons. Troops: If you are going pure Sisters, then they are it. 10-20 Squad size, can take Rhinos. I suggest trying to give them only Assault Special weapons and Rhinos to keep them mobile. Fast: Seraphim and Dominion Squads. Seraphim are Jump Infantry and are good for taking out troops and some can take Inferno Pistols for tank hunting. Dominion Squads are essentially Devastator squads with Assault weapons and are required to take a Rhino or an Immolator. Heavy: Retribution Squads are the same as Devastator squads, but are armed with different weapon options. Immolators are Razorbacks with different options. These are most of the options that are strictly Sisters. There are some other choices that often seen in Sister armies such as Priests, Arco-flagellates and Penitent Engines. These are just a brief rundown, for a more in-depth synopsis, this http://forums.tauonline.org/index.php/topic,5338.0.html is a much more detailed description of their respective abilities. Hope this helps.

They are pretty much all the same model set, Celestines, Sisters, Dominions and Retributers [sp?] are all interchangeable. If you put a Heavy weapon in a Sisters or Celestine squad, they will be the same as the one in a Retribution squad.
If they ever get an updated Codex they may get different plastic models sets, but they also may just be re-cuts of the same sprues. Who knows.
