I would recommend more dreadnoughts over the land raider. And I would also recommend taking a few squads of storm troopers instead of 2 squads of GK's, since 5th edition is all about body count, and also having access to anti tank weapons. I'm not too sure about the fluff, so I don't know if IST's are pure, but I still think you should maximise your body count since only troops can be scoring units.
good luck

I put the land raider in to soak up fire power to keep my units alive. The only units I want to use for the theme is grey knights so they are a no no. I love the background for grey knights but I dont want to get beat in every game (not my idea of fun!)

I have always been a fan of durability over numbers (funny, coming from a guard player) But what pwner50 says is true. 5th Edition gives away cover saves like they are going out of style, and this benefits fragile troops much better than it does durable ones. Going with the all Grey Knights theme is fine, I'm just saying that storm troopers will be more effective. You could always justify them as Cadian Kasrkins, since they often fight alongside the Daemonhunters, and have experience in fighting the incursions of Chaos.
Other than that, I think you have a very solid army list. I would like to see the Grey Knights with some incinerators, but you would have to make some numbers reductions to afford them.

I'm pretty sure Brother-captains can't take melta bombs on account of the terminator armour

I´m having some doubts about a pure GK force. Namely Tau are a worry, because they can blast the GK down before they can do real damage. Sure, storm bolters pack some punch. But you have such small squads, and Tau have so much ranged firepower. And watching your 225 points worth of GK being blast down in one turn isn't a really pretty sight. This list has a lot of bodies in it, which compensates. And a squad of GK can easily whipe out a Fireteam at CC. But still I wouldn't make my main soldiers GK. Stormtroopers are a lot cheaper, and if you lose one it's not that big of a deal. Still, I must say that you did handle the problem very wel. But try to keep the Dread out of LoS when facing a Railgun, for obvious reasons. Cheers, and if you encounter a Tau player who uses a lot of range ( :shifty: one that doesn't use a lot of Kroot and Vespids that is) try to tell me how you fared please, for the idea of an army of GKs is briliant
